2-3 cups canned / boiled chickpeas, rinsed and drained

  • 2 cups mixed cherry tomatoes, halved (or left whole, if desired)
  • 1 large yellow bell pepper, chopped
  • 1 long cucumber, chopped
  • 1 cup chopped kale
  • 1 small red onion, chopped
  • 2 tablespoons freshly chopped parsley
  • Olives (optional)
  • For the dressing:
  • 2 tablespoons olive oil
  • Juice of one lemon (approximately 2 tablespoons lemon juice)
  • Sea salt and pepper (to taste)
