2-3 cups canned / boiled chickpeas, rinsed and drained
- 2 cups mixed cherry tomatoes, halved (or left whole, if desired)
- 1 large yellow bell pepper, chopped
- 1 long cucumber, chopped
- 1 cup chopped kale
- 1 small red onion, chopped
- 2 tablespoons freshly chopped parsley
- Olives (optional)
- For the dressing:
- 2 tablespoons olive oil
- Juice of one lemon (approximately 2 tablespoons lemon juice)
- Sea salt and pepper (to taste)
