Spicy potatoes are one of the delicious appetizers that you can decorate your trip with to add taste to your dishes.
Ingredients
- 1 cup of chopped coriander
- 4 tablespoons of olive oil
- 4 cloves of garlic
- 2 tablespoons of lemon juice
- 1/2 teaspoon salt
- 4 sweet potatoes
- 4 tablespoons of vegetable oil
- 1/2 teaspoon coriander powder
- 1/2 teaspoon white pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
Method
- Wash the potatoes well, peel them and cut them into cubes of medium size
- Put an ample amount of vegetable oil in a saucepan and let it simmer over medium heat until it becomes hot
- We put the potato cubes in the pot and fry them halfway, remove them from the oil and set them aside
- In another pan, put the amount of olive oil, add the crushed garlic, and let it simmer over medium heat until the garlic becomes pink in color
- Add the chopped coriander to the garlic and stir them together until the coriander wilts
- Add salt, white pepper, soft coriander and paprika and stir well
- Add the fried potatoes over the garlic and coriander mixture and leave them on medium heat for twenty minutes, while continuing to stir every once in a while
- After twenty minutes, add lemon juice and stir well
- Pour the hot potatoes with coriander in a plate, sprinkle the oregano on top and it's ready to be served
